7 drool-worthy avocado recipes

Declaration: We are having a culinary love affair with avocados.

Which makes sense since avocados are easy, healthy, and “make everything better,” confirms Lianna Sugarman, the New York founder of raw beverage company, LuliTonix. She's a big fan of the fruit and a master of blending it with chia seeds, kale, and herbs.

"They have amazing anti-inflammatory properties. They’re so good for your skin and hair. And even though they contain fat, it’s all good fat that actually helps with weight management. Avocados are the perfect food," she gushes.

Since we can’t get enough of them either, we tapped Sugarman for creative recipes that are quick to whip up at home. They include seriously delish Raw Avocado, Cacao, Ginger & Mint Bites and a Coffee-Avocado Smoothie—to a get-out-the-grill Vegan Guacamole Burger made with a Portobello mushroom "bun."

LiannaSugarman_avocado_MintChocBites5Raw Avocado, Cacao, Ginger & Mint Bites
Makes about 20, and there's zero level of difficulty.

2 avocados
1 cup cacao
1/2 cup cacao nibs
1/2 cup coconut sugar (or more depending on desired sweetness)
3 Tbsp coconut oil
1 Tbsp vanilla
1/2–1 cup mint leaves
5 pieces of fresh ginger
2 drops of mint extract (optional)
Pinch Himalayan salt
Coconut, hemp seeds, or cacao nibs (for garnish)

Place all ingredients into a food processor or Vitamix (using tamper as needed), and blend until smooth. Roll into balls, or put into ice trays, and allow to set in the fridge for 20 minutes.

avocado, soupChilled Summer Avocado Soup
Serves 4

2 avocados
3 peeled cucumbers
Juice of 2 or 3 limes
1/4 cup chopped mint
Salt & pepper to taste
2 thumbs of ginger (optional)
Microgreens or hemp seeds for garnish (optional)

Blend all ingredients, using tamper to liquify the cucumbers. Sprinkle with microgreens or hemp seeds, if desired. Best served chilled.

Serves 6

4 avocados
3/4 cup maple syrup (or sweetener of choice, such as coconut nectar or coconut sugar)
1/2 cup raw cacao powder
2 Tbsp coconut oil
1 Tbsp vanilla
Pinch of Himalayan salt
Goji berries, cacao nibs, or golden berries (optional garnish)

Blend or food process until smooth (if you have a Vitamix, use tamper). Sprinkle goji berries, cacao nibs, or golden berries on top.

For this open-faced "burger" recipe, a Portobello mushroom is your "bun" and the "meat" is tempeh. Makes 4 burgers.

Guacamole
3 ripe avocados
1/2 cup cilantro
Juice of 2 lemons or limes
2 Tbsp organic olive oil
1/2 tsp Cayenne pepper (more or less depending on how spicy you like it)
1 diced tomato
1 garlic clove (or red onion)
Salt and pepper to taste

Mash the avocados, add garlic (crushed or minced), lemon, olive oil, chopped cilantro,
and remaining ingredients.

Burger
1 block of organic tempeh (sliced in half and then in thirds—you want to slice it in
squares like a piece of bread)
1/4 cup cilantro
1 Tbsp coconut oil (or olive oil)
1/2 tsp chili flakes
Pinch of salt

Marinate tempeh on a plate with all ingredients on top for 10—15 minutes. Grill on high for 15 minutes, or until golden brown on both sides.

Bun
4 Portobello mushrooms (1 per burger, served open-faced)

Grill on high for 10-15 minutes or until cooked.Place grilled tempeh onto Portobello "bun", add guacamole, and garnish with cilantro.

Avocado Joe_LiannaSugarmanAvocado Coffee Shake

½ avocado
1 frozen banana (if not frozen, use less water but throw in some ice cubes)
1 Tbsp organic whole coffee beans (or slightly less if ground)
1 Tbsp coconut oil (optional)
1 tsp vanilla
10 ounces cold water
Coffee beans (optional garnish)

Blend to desired consistency—pour in a glass and toss a few coffee beans on top as a garnish. (Bonus: Blend 1 tablespoon of chia seeds, a spoon of cacao, or maca for an added boost.)

2 avocados
1 bunch of kale, leaves torn and lightly massaged, if needed
Juice of 1 lemon (to squeeze on as dressing)
1/2 cup of parsley
1/2 cup of cilantro
1/4 cup of mint
2 Tbsp goji Berries
2 Tbsp hemp seeds
1 Tbsp pumpkin seeds
1 Tbsp nutritional yeast (optional)
Pinch Himalayan salt
Pinch cayenne pepper

Wash and prep greens, avocado, and lemon juice. Mix together in a large bowl, then add goji berries, hemp seeds, pumpkin seeds, salt, and nutritional yeast.

margarita photo with avocado and goji berriesSuper-Green Avocado Detox-Retox Margarita
Makes 2–4 margaritas

1 avocado
2.5 cups frozen organic mango
2 cups of water
1/2 cup tequila
Handful of cilantro
Juice of 1 or 2 fresh limes
A few leaves of basil
2 kale leaves
1 Tbsp goji berries (or ginger for an extra kick)
Pinch of Himalayan salt

Add all ingredients to your blender and mix for 2 to 3 minutes.

Tip: This is a VERY forgiving recipe. You can make it with more basil and less cilantro, with more or less kale, or you can even throw in a cucumber or some mint or ginger if you like.

Tip 2: Make it Virgin. It's an amazing and filling supercharged shake that will stave off hunger and give you that glow we all love. Just eliminate the tequila and add more water for this option.
