This Lower-Sugar Spin on an Amaro and Cream Cocktail Is a Delicious After-Dinner Digestif

In our current age of daily probiotics and gut-health everything, you probably aren't relying on an after-dinner digestif as your primary digestion-supporting tool—but that doesn't mean you can't enjoy the tradition and deliciousness of the post-dessert, dessert cocktail.

In our latest episode of Alt-Baking Bootcamp, nutritionist, baker, and amateur mixologist Sashah Handal shows us how to shake up a modern digestif (an alcoholic drink traditionally served after a meal and thought to aid in digestion) with her version of an amaro and cream, which she's dubbed a "Bitter Baileys."

Featuring a base of whiskey, amaro—a bittersweet, herbal Italian liqueur—and Baileys Deliciously Light—the creamy Irish liqueur with 40 percent less sugar than the original—the real star of the sip is the homemade whipped cream you plunk into your finished cocktail.

To make the whipped cream (which is made even more decadent by infusing it with the cocoa and vanilla flavors of Baileys Deliciously Light), you just add your Baileys, heavy cream, confectioners sugar, cream of tartar, and a little vanilla to a standing mixer, and you'll end up with thick whipped cream that adds just the right amount of sweetness to balance the bite of the cocktail ingredients.

Bitter Baileys Cocktail

Ingredients

Baileys Whipped Cream
1 oz. Baileys Deliciously Light
2 cups heavy cream
1/3 cup confectioners sugar
1 tsp cream of tartar
1 Tbsp vanilla

Cocktail
1 oz. Baileys Deliciously Light
1 oz. amaro
1/2 oz. chilled corn whiskey
5 ice cubes

1. Pour chilled heavy cream into a chilled bowl, and add confectioners sugar.

2. Pour in Baileys Deliciously Light while the cream is whipping at medium speed for 30 seconds.

3. Store whipped cream in the fridge until you're ready to serve.

For the cocktail

1. Add Baileys Deliciously Light, amaro, and whiskey into a cocktail shaker.

2. Shake vigorously for 35 seconds for a frothy consistency.

3. Pour into a cup or shallow rocks glass, top it off with Baileys whipped cream, and enjoy!
