Lily Kunin’s Step-by-Step Guide to Making the Supercharged Matcha of Your Dreams
Well, good news and bad news: While you’re stuck with the luck of the draw in the avocado department, you're golden on the matcha-latte front—because we've got the step-by-step, beginner's guide to becoming a matcha whisperer, straight from wellness luminary Lily Kunin.
As a Well+Good Council member and founder of Clean Market, a serene wellness haven for New Yorkers, Kunin slings tonics and specialized self-care services (IV drips, infrared saunas, and cryotherapy) to the masses. And a supercharged matcha is just the thing she needs to start her busy day.
"My go-to matcha has matcha, collagen, coconut butter, Brain Octane, and cinnamon," Kunin says (FYI, Brain Octane is basically fancy MCT oil, the beloved keto ingredient buzzed about for its energizing properties). "Besides being delicious, it’s a great way to fuel my morning (has over 10 grams of protein) and turn my brain back on."

1. Gather all the ingredients
Set yourself up with a DIY matcha station with matcha powder, coconut butter, Brain Octane oil, collagen powder, and cinnamon—plus your choice of plant-based milk in the fridge—for matcha lattes on tap that you can enjoy in your fave sun-drenched spot at home.
For a calming and gently caffeinating tea that's not too bitter, scoop 2 teaspoons of matcha tea powder into your mug for every 1 cup of liquid you plan to add.
2. Add coconut butter
Give your antioxidant-rich bev a nourishing boost by dropping in about a tablespoon of coconut butter, packed with fiber, magnesium, potassium, and iron. Plus, as a good source of healthy fat, the creamy addition will help you feel satiated until lunch time.
3. Pour in energy-boosting MCT oil
Take a page from the Clean Market menu, where drinks are spiked with adaptogens and boosters, and add Bulletproof Brain Octane Oil to your mug. 4. Get a neutral-tasting protein boost
While matcha powder is your go-to for gentle caffeination, collagen powder should be your go-to for a protein-packed beauty boost. “I love collagen for the protein—it’s super easy to add to your favorite beverage without affecting the flavor or texture,” Kunin says. “It’s also amazing for joints, hair, skin, and nails (I particularly notice a huge difference in my nail strength when I am taking it)!” Sold.
5. Froth until smooth
Behold: You don’t need a café-grade frother to perfectly aerate your drink. Simply a bit of boiling water to your mug and blend with a portable Aerolatte frother until everything is incorporated.
6. Add the creamy factor
Steam or warm your plant-based alt milk on the stovetop or microwave, then pour the creamy goodness into your vibrant green matcha. It's official: You're ready to tackle the day.
