Caitlin Shoemaker, the vegan recipe developer behind From My Bowl, recently posted a lunch option that's bound to give both your body and your Instagram feed a boost. The concept of her rainbow veggie sandwich is simple: Combine the crispiest, crunchiest, and healthiest greens—and, you know, other hues too!—in order to make getting your daily vitamin and nutrient fix more enjoyable. "I love to show people eating their veggies can be both fun and delicious—and these sandwiches check both of those boxes," Shoemaker tells me.

To quite literally taste the rainbow, all you need to do is spread some creamy hummus on your bread of choice, then stack up some thinly sliced produce in the ROYGBIV order. Shoemaker uses beets, tomato, carrot, yellow bell pepper, butter lettuce, power greens (like spinach and kale), and cucumber, but she says the recipe can shift to fit your preferences.
