*To make one chia egg, mix 1 Tbsp flaxseed meal or chia seeds with 2.5 Tbsp water, and let sit for 5 minutes to thicken.
Ingredients
Sweet potato collagen waffles
1 box Simple Mills Pancake and Waffle Mix
5 flax or chia eggs*
⅔ cup milk or water
3 Tbsp coconut oil
⅓ cup + 1 Tbsp mashed sweet potato
¼ cup collagen powder
Creamy, dreamy topping
½ cup coconut cream
2 Tbsp cocoa powder
1-1 ½ Tbsp maple sugar
1. Whisk eggs, milk, oil, and sweet potato in a large bowl. Add the waffle mix and collagen, whisking until well combined.
2. Pour batter onto pre-heated waffle iron and cook on high, according to waffle-iron instructions.
3. Mix topping ingredients together in a bowl and add a dollop to your waffles, or drizzle with honey and add a dash of cinnamon. Dig in!
