Vegans, Rejoice! We Found the Perfect Vegan Fried Egg Recipe That Makes for an Egg-Cellent Breakfast Addition

If there's one thing I miss years after going vegan, it's eggs. Not meat, not cheese (*gasp!*), just eggs. I lived for daily omelets and scrambles, and there are definitely products on the market now that completely nix my cravings for both of those former staples. But I definitely didn't think I'd ever see the day where I got to relive eating my beloved avocado toast topped with a fried egg, yolk and all, until I came across this video below. Ellie Bullen's vegan fried egg recipe
For the yolk
3/4 cup pumpkin (boiled and drained)
1 Tbsp nutritional yeast
2 Tbsp corn flour
2 Tbsp water
2 Tbsp olive oil
1/4 tsp black pepper
1/4 tsp black salt (AKA kala namak)
pinch of salt
For the egg white
1/4 cup rice flour
1/4 cup coconut milk
1 Tbsp water
pinch of salt
After boiling and draining the pumpkin, put it into a blender with the rest of the yolk ingredients and blend until smooth. Separately, grab a bowl and combine all the egg white ingredients, stirring until there are no clumps.
Then it's time to cook. Heat your pan so it's on medium to high heat and add a teaspoon of olive oil. After the oil is hot, Bullen says to spoon in 2 Tbsp of the egg white mix right into the center of the pan, then cover it with a lid for 10 seconds. Next, add 1 Tbsp of the egg yolk mixture to the center of the egg white and cover it with a lid again for about 30 more seconds, or until the edges are crispy.
After that, you're ready to put your fried egg on top of your avocado toast, adding a pinch of salt and pepper if you want. Talk about a breakfast of champions.
