The No-Cook Veggie Tacos This Food Blogger Turns to for Last Minute-Meals
With two jobs and a side hustle (she works as a valet and yoga instructor while also managing Wellness with Courtnie), she can't always craft the photogenic meals you see on her Insta, and there are definitely nights when she falls back on eggs and avo toast for dinner. (Wellness bloggers, they're just like us.)
"A lot of times I’m rushing from teaching yoga to my valet job and only have a few minutes to prepare a meal, so I always make sure to have food stocked in my kitchen that I can whip up quickly," Hamal says. "Fried eggs and avocado toast always comes in handy."
But instead of feeling less than, she celebrates all the simplicity in her diet (“I try to make my recipes as simple and easy as possible”), by prioritizing eating wholesome foods and sipping on hydrating beverages like Spindrift® Grapefruit, which is just sparkling water and real fruit.
"In the warm months, I always find myself reaching for a cold beverage, and love to pour Spindrift over ice to enjoy with lunch," she says. "I love how tart and refreshing grapefruit is without being overly sweet." Because keeping it simple always tastes good—even when you're in a hurry.

Wellness with Courtnie's Veggie Tacos with Grapefruit, Mango, and Avocado Salsa
If all you have on hand is a can of beans and a random assortment of veggies, you can still make this seriously colorful meal—and you don't even have to turn on the oven (a life-saver on hot summer days).
“I don’t really measure anything or use fancy sauces or seasonings," she says. "You don’t have to be a chef to make beautiful and delicious food. I’m all about sharing how easy and accessible eating healthy can be."
Keep the cooling vibes flowing by pairing your tacos with a can of Spindrift®️ Grapefruit that's flavored with real citrus fruit that can actually make your veggie creation even better for you.
"The richness of the avocado perfectly compliments the acidic citrus," Hamal says. "Not to mention, the healthy fats in the avocado helps to increase lycopene absorption, making it more bioavailable."
