Shoemaker uses beets, tomato, carrot, yellow bell pepper, butter lettuce, power greens (like spinach and kale), and cucumber, but she says the recipe can shift to fit your preferences. “[The sandwich is] easy to make, full of fiber to keep you full, and can easily be customized to use whatever produce you have in your fridge,” she says.
