2. Vegan lentil and walnut tacos

When you prep this vegan taco “meat” on Sunday, you’ll have a healthy and flavorful lunch you can devour all week long. “The taco meat is a filling mix of mushrooms, cauliflower, walnuts, and lentils,” says chef Palak Patel. “The mushrooms have a lot of flavor, the lentils give it a heartiness, and the cauliflower and walnuts give it a nice crunch.”

3. Warming one-pot vegetable dal

This vegetarian dal recipe is loaded with veggies. Better yet, you can make it in one pot in three simple steps. All you need are a bunch of veggies, lentils, tomato paste, and some warming spices.
