Avocado “hollandaise” sauce is the brainchild of Felicia, the food blogger behind Felicia’s Fab Foodz. “It’s the perfect fancy-looking Sunday brunch, and it’s so easy to whip up,” she wrote on Instagram. To make it, put half an avocado in a blender with a little lemon juice, olive oil, your choice of milk, and salt, and blend until smooth.
Felicia uses her healthy avocado hollandaise sauce recipe with a poached egg atop a slice of sprouted wheat bread, sprinkled with chopped chives and ground black pepper. You can get creative and try other options too, like drizzling it over a tofu scramble. With a sauce this delicious—and good for you, as it’s packed with healthy fats!—you really can’t go wrong.

Ingredients
1/2 avocadoJuice of 1/4 lemon2 tablespoon olive oil1 tablespoon milk of choiceSalt (to taste)⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀1. Blend all ingredients until smooth and there are no chunky bits of avocado.2. Add more milk if needed.3. Serve over a poached egg, or whatever you want.
