These sugar-free ketogenic dessert bites require zero baking

What happens when a buzzy wellness food blogger teams up with a ketogenic mastermind? A delicious dessert that’s sugar-free, high-fat (in a good way), and yes, majorly healthy.

“They’re little fat bombs with protein,” says Lee Tilghman—AKA Lee From America—of the two creations dreamed up with Los Angeles’ ketogenic dessert chef-about-town Crosby Tailor. Though not a die-hard keto-follower herself, Tilghman is familiar with the gut-, bone-, and beauty-boosting benefits of collagen and was looking for a way to experiment with the ingredient.

The end result more than delivers. “Both of the dessert bites we came up with are so nutrient-dense and satisfying that they really keep you full,” she says. “Plus, they won’t spike your blood sugar because they’re completely sugar-free.” (Pssst: The secret is monk fruit.) And as if that wasn’t a draw enough, they’re adaptogenic and inflammation-fighting. Such overachievers, right?

Ketosis Bites

Ingredients
Cinnamon Maca Bites
1/2 cup coconut butter1 1/4 cup coconut shreds2 Tbsp collagen peptides1/3 cup monk fruit sweetener,3/4 tsp salt1 1/2 Tbsp ghee1 tsp pearl powder, optional1 tsp cinnamon1/2 tsp maca

Blue Majik Mint
1/2 cup coconut butter1 1/4 cup coconut shreds1 tsp blue majik powder2 Tbsp collagen peptides1/3 cup monk fruit sweetener3/4 tsp salt1 1/2 Tbsp ghee1 tsp pearl powder, optional20 drops peppermint essential oil1 Tbsp cacao nibs, plus more for garnish if you want

1. Place all your ingredients in a food processor. Process for 1 minute or until everything is blended together.

2. Using a silicone ice cube tray (or any freezable mold you can find), spoon the batter into the molds.

3. Freeze for 1 hour or until frozen solid. Let thaw for 5 minutes before attempting to remove from the molds for easier removal.

4. Store in the freezer in an airtight container for up to 2 weeks.
