You know matcha has reached its peak popularity when it’s on the menu at Starbucks. Maybe that’s why wellness influencers are on the hunt for a new, even-better-for-you beverage. Well, the search may be over. Blue lattes—yep, blue—are beginning to emerge as the latest “it” healthy drink.

According to The Guardian, a small coffeeshop in Melbourne, Matcha Mylkbar, created the concoction, combining coconut milk, agave, lemon, ginger, and blue algae powder. If you’re scratching your head wondering why people would line up out the door for something that doesn’t have any caffeine in it (can it still technically be called a latte?!), it’s all because of the blue algae powder.

Closely related to spirulina, blue algae is crazy packed with nutrients (no really, it has over 65 of ’em), is full of antioxidants, and is anti-inflammatory. Okay, ready for the bad news? The powder the Australian cafe is using isn’t available here in the US, so in the meantime, you’ll have to head to Juice Generation for the next best thing: blue majik (an extract of spirulina).

Blue algae aside, this new “latte” is still one seriously healthy drink. Coconut milk has healthy fats, agave is absorbed more slowly than sugar (so you don’t get a crazed rush), ginger boosts immunity, and lemons are loaded with vitamin C.

We do love a sippable superfood, so we’ll be watching to see if blue algae lattes (and their crazy color) are spotted soon in places where you’d get your matcha—or all over Instagram.
