When is a cocktail more than just a cocktail? When it doubles as a dessert that warms you up faster than a seat by the fireplace. The “snow bunny,” a cocktail newly on the menu at New York City’s Egg Shop, was developed when the restaurant’s bartender was working on riffs for a hot toddy and stumbled on this winning combination.

“The snow bunny cocktail is all about balance,” says Sarah Schneider, co-owner of Egg Shop. “A bit of whiskey for warmth, marshmallow for sweetness, and almond milk so you don’t feel like you’re getting too boozy!”

With just one ounce of liquor per drink, it’s enough to warm you up without throwing you out of whack. Plus, the almond milk adds a bit of protein and vitamin E and the maple syrup makes it naturally sweet while the cinnamon adds a spiced kick. And the marshmallow? That’s just for fun.

The snow bunny cocktail

Makes 2

Ingredients
2 oz. whiskey2 whole marshmallows1 oz. maple syrup4 oz. unsweetened almond milkGround cinnamon for serving.

1. In a small saucepan, warm maple syrup and almond milk until small bubbles form. Whisk to froth.

2. Divide whiskey and marshmallows between two small glasses. Top with warm maple milk. Sprinkle with cinnamon and serve immediately.
